The successful candidate will have a solid track record of research in the domains of food fermentation, biochemistry or chemistry. He/She will have knowledge of flavour development via constitutive biochemical processes, i.e. biochemistry of edible plants, fermentation processes, or the thermal chemistry which occurs when food is cooked. We have a special interest in candidates who have such experience with respect to the different cuisines found in Asia. He/She will:
Have a Ph.D. in Food Science, Microbiology, Biochemistry or Chemistry will be required together with experience of: food fermentation, biochemistry of plant secondary metabolism, enzymology and reaction flavours such as Maillard reactions, would be highly desirable;
Have a good command of written and spoken English;
Be able to use standard PC and office programmes
